Direction:

  • In a large food bucket, place the raisins and pour the boiling water over them.
  • Cover with a porous lid, and allow to soak for twenty four hours.
  • Using your hands, squeeze the raisins well to release the fruit flavours.
  • Strain the liquid through a cheesecloth and place into a large nonreactive pot.
  • Add the citrus juices, and over high heat bring the liquid to a boil.
  • Remove the liquid from heat right away.
  • Bring the heated liquid back to the food bucket, add sugar and stir using a long nonreactive spoon.
  • Stir thoroughly until sugar is dissolved.
  • Sprinkle the yeast on top when the liquid has cooled to lukewarm.
  • Cover with a loose-fitting lid or with a nylon stocking.
  • Allow to ferment for fourteen days.
  • In a clean glass container strain the liquid and cover appropriately.
  • The wine will be ready for bottling in six to twelve months.
