Wild Raisin Wine Recipe
Ingredients:
- 9 cups of wild raisins
- 1/4 teaspoon wine yeast
- 4 1/2 quarts boiling water
- juice from 2 lemons
- juice from 2 oranges
- 5 cups sugar

Direction:
- In a large food bucket, place the raisins and pour the boiling
water over them.
- Cover with a porous lid, and allow to soak for twenty four
hours.
- Using your hands, squeeze the raisins well to release the fruit
flavours.
- Strain the liquid through a cheesecloth and place into a large
nonreactive pot.
- Add the citrus juices, and over high heat bring the liquid to a
boil.
- Remove the liquid from heat right away.
- Bring the heated liquid back to the food bucket, add sugar and
stir using a long nonreactive spoon.
- Stir thoroughly until sugar is dissolved.
- Sprinkle the yeast on top when the liquid has cooled to
lukewarm.
- Cover with a loose-fitting lid or with a nylon stocking.
- Allow to ferment for fourteen days.
- In a clean glass container strain the liquid and cover
appropriately.
- The wine will be ready for bottling in six to twelve months.
