  • 16 cups blackberries (rinsed with cold water)
  • 1/4 teaspoon wine yeast
  • 1 gallon boiling water
  • 8 cups sugar

Wild Blackberry Wine

Direction:

  • Break the berries by crushing them with your hands or a potato masher then place them in a large food bucket.
  • Pour the boiling water over the crushed berries.
  • Strain the liquid through a colander and then through the cheesecloth while the pulp is still hot.
  • Place the heated liquid back to the bucket then add the sugar. Stir until the sugar is dissolved using a long nonreactive spoon.
  • Sprinkle the yeast on top when the mixture has cooled to lukewarm.
  • Cover the bucket with a loose fitting lid or a nylon stocking and allow to ferment for fourteen days.
  • Strain the liquid into a clean glass container then cover.
  • The wine will be ready for bottling in six to twelve months.
