Wild Apple Wine Recipe
Ingredients:
- 6 pounds (2.7 kg) unpeeled wild apples
- 1/4 teaspoon wine yeast
- wiped clean of debris
- 1 gallon of cold water
- 3 cups raisins
- 8 cups sugar

Direction:
- Finely chop the apples using a kitchen knife and place in a
large food bucket. Pour with cold water then cover with a porous
lid.
- Soak for forty eight hours, stirring periodically using a long
nonreactive spoon.
- Strain the liquid using a strainer and in a large nonreactive
pot strain the liquid again using cheesecloth.
- Bring the liquid to boil, then reduce the heat to low. Simmer
for five minutes.
- Discard any scum that appears in the surface.
- Place the heated liquid back to the bucket then add the raisins
and sugar, stir carefully until sugar is dissolved.
- Sprinkle the yeast on top when cooled.
- Using a nylon stocking and loose-fitting lid, cover the bucket
and allow the mixture to ferment for fourteen days.
