Gooseberries

Gooseberry Wine Recipe

Ingredients:

  • About 12 cups of gooseberries, rinsed with cold water
  • 1/4 teaspoon wine yeast
  • 1 gallon boiling water
  • 6 cups sugar

Gooseberry Wine

Direction:

  • Crush the gooseberries with your hands or a potato masher until the skins are broken.
  • Pour the boiling water over the crushed gooseberries then cover with a porous lid.
  • Allow to soak for forty-eight hours.
  • Crush or stir the fruit once more, then strain through cheesecloth into a large nonreactive pot.
  • Bring to a boil over high heat, then remove from heat right away.
  • Bring the heated juice back to the bucket, add the sugar and stir using a long nonreactive spoon.
  • Stir thoroughly until sugar is dissolved.
  • Sprinkle the yeast on top when the liquid has cooled to lukewarm. Cover with a loose-fitting lid and stocking and allow to ferment for fourteen days.
  • In a clean glass container, strain the liquid and cover as appropriate.
  • The fine will be ready for bottling in six to twelve months.
