Chokecherry Wine Recipe
Ingredients:
- About 16 cups chokecherries (rinsed with cold water)
- 3 cups raisins
- 1/4 teaspoon wine yeast
- 1 gallon cold water
- 2 cups wheat berries
- 9 cups sugar

Direction:
- In a large food bucket crush the fruits with your hands or
with a potato masher.
- Pour the crushed fruits with cold water then cover the bucket
with porous lid.
- Allow the mixture to soak for forty-eight hours.
- Strain the liquid to a colander then remove the tiny particles
such as fruit skins and cherry pits.
- Strain again using a cheesecloth to remove the fine sediment.
- Place the liquid into a large nonreactive pot and bring to boil.
- Turn the heat to low and allow to simmer for seven minutes.
- Place the heated liquid back to the bucket, add the raisins,
wheat berries and sugar.
- Using a long nonreactive spoon stir the mixture until sugar is
dissolved.
- When the liquid has cooled to lukewarm, sprinkle the yeast on
top.
- Cover with a loose-fitting lid and nylon stocking.
- Allow to ferment for fourteen days.
- In a clean glass container, strain the liquid and cover as
appropriate.
- The wine will be ready for bottling in six to twelve months.
